Oats: Picking a Gluten-Free Product
Oats are naturally gluten-free, however, they are typically grown in fields adjacent to other grain crops including wheat, rye and barley. This makes for lots of cross contact in how oats are grown, harvested, transported and processed. But, don’t worry, there are safe oats for a gluten-free diet. To find them, you’ll always want to look for a gluten-free label on any oat product you purchase. This is very important to confirm that the oats were tested to below the 20ppm threshold set by the FDA. Are Oats Safe on a Gluten Free Diet?

Current Research on Oats There have been a number of research studies performed to evaluate the safety of oat consumption. Many of them report that components in oat proteins cause inflammation and elicit damage in patients with gluten sensitivity. Most recently, a study published in the European Journal of Nutrition found that some forms of oat protein triggered and antibody reaction. Another study published in the Scandinavian Journal of Gastroenterology found two varieties of oat proteins were responsible for increased intraepithelial T-cell density and IFN-γ production (both of these are signs of increased inflammation). In 2012 a research study was published identifying a... direct correlation of the immunogenicity of the different oat varieties with the toxicity of peptides present in their avenin sequences. In plain English please - Proteins in oat cereal stimulated an immune response similar to what is seen from wheat. The studies above were all published after Jan. of 2011. In medicine, it can take 20-30 years for new information to become common knowledge among doctors. So I don't expect that many physicians will be talking about the potential for oat to be a problem for those with gluten sensitivity. That being said, let's take a look at a comprehensive review of the medical literature that was published in 2011 compiling 75 studies published on the topic since 1953. The summary from the authors are quoted below: Oats in a gluten-free diet increase the diet's nutritional value, but their use remains controversial. Contamination with prolamins of other cereals is frequent, and some clinical and experimental studies support the view that a subgroup of celiac patients may be intolerant to pure oats. Thus, this issue is more complex than previously suggested. In order to produce oats that are safe for all celiac patients, the following topics should be addressed: selection of oat cultivars with low avenin content, research on such recombinant varieties of oats, development of assay methods to detect avenins in oat products, guidelines for the agricultural processing of oats and the manufacture of oat products, as well as guidelines for following up with celiac patients who consume oats. Oats & Corn Are Not Gluten Free
Corn and Oats both contain gliadin and glutenin that make up the gluten complex just like wheat, rye and barley. There is no such thing as a gluten-free oat. The proteins in oats and corn are slightly different as they come from a different subfamily of grasses as wheat, rye and barley. They don't cause a gluten reaction in every gluten sensitive person and don't seem to be able to stimulate the typical celiac disease small intestine damage as effectively as gluten from wheat, rye and barley. They are important in most other autoimmune problems like Hashimoto's Thyroiditis, rheumatoid arthritis and many more. Rice is in the same subfamily as corn and oats but has a much lower gluten content than oats or corn and seems to be tolerated by most gluten sensitive people. Sorghum is closely related to corn but seems to contain a much safer type of gluten than corn or oats. You can also get tested for about $220 to see if you react to some of these other types of gluten grains.

Then I found out that I can use oats instead of white flour in order to make tortillas which I like very much, so the oat tortillas tastes wonderful but also a lot healthier than the tortillas that are made out of white flour. Most people today use white or wheat flour and don’t know about the multiple side effects they cause. There are all-natural, great-tasting flours that you can substitute with. Bob’s Red Mill Company and Sprouted Flour Company are both great alternatives you can use. Coconut flour is high in fiber, healthy fats, helps you lose weight, boosts your metabolism, and is another great replacement flour to consume. A general, gluten-free, Bob’s Red Mill flour is a great substitute because it’s made with chickpea from garbanzo bean flour, sorghum flour, and potato starch. This flour has good texture and one cup of this flour is equal to one cup of regular white flour. Gluten-free, sprouted yellow corn flower is another great flour to use with cooking because the flour is soaked, which kills off phytic acid, allowing you to absorb vitamins and minerals more easily. This flour is also good for cooking cornbread. Organic spelt flour is a flour I recommend because it is sprouted and easy to cook with. Additionally, gluten-free sprouted oat flour is great for chocolate chip raisin oatmeal cookies, which taste amazing, but it’s also easy to digest. Brown rice flour from Bob’s Red Mill Company is a healthy substitute which is non-allergenic for a lot of people and can be digested well. Lastly, finely ground almond meal flour is a great flour to use when cooking because almonds are loaded with fiber, L-arginine, healthy fats, and can be used for a lot of different kinds of recipes. These seven natural, gluten-free substitute flours are great replacements and you won’t deal with the side effects of white and wheat flours! Homemade Oatmeal Bread (A Recipe From My Bakery)
In this video I demonstrated how to make homemade oatmeal bread from a recipe I developed for my bakery. It's scaled down to two loaves. I walk viewers through the process, step-by-step, to take the mystery out of dealing with yeast doughs. It's really not hard! Give it a try and let me know below how your bread turns out! Judi Oatmeal Bread Makes 2 Loaves 1-1/2 c boiling water 1-1/2 c quick oats 1-1/2 oz (3 Tbsp) butter 1/4 c honey 1 Tbsp brown sugar 2 tsp salt 2 tsp potato starch 1 lb 4 oz (4 cups) bread flour 1/2 oz RapidRise yeast 2 eggs Melted butter In a saucepan, heat water to boiling. Meanwhile, place oats, butter, honey, brown sugar, salt and potato starch in a mixer bowl. Add hot water; mix with a paddle until well blended and temperature reduces to 120-130F. Change mixer paddle to a dough hook. Add flour, yeast and eggs; mix on low speed to combine all ingredients. Continue mixing on low to medium speed for 8 to 10 minutes. Remove bowl from mixer, lightly coat dough with nonstick spray, cover and allow dough to rest for 10 minutes. On a lightly floured board, divide dough into two pieces. Form each piece into a loaf and place each in a greased loaf pan. Place in an oven proof box (see video) or spray with nonstick spray, cover with waxed paper and a towel and allow dough to rise ON (not in) a warm oven for about 30 minutes. Bake at 350F for 30 minutes, until golden brown. Remove from pans and place on a wire rack. Brush tops with melted butter. Allow bread to cool before cutting.

Prolamins are proteins that exist in the seeds of cereal grains. Prolamins: Gluten consists of a prolamin and a glutelin. Prolamins are storage proteins, and they are the “hardware stores” of the wheat structure that distribute amino acids central to the plant’s development. Glutelin is the “glue” that holds these hardware stores together. Wheat gluten itself consists of the prolamin gliadin and the glutelin glutenin. Gliadin stimulates zonulin, the traffic cop of the gut lining, to allow it to pass into our digestive tract largely undigested and interacting with tissue transglutaminase (tTG), an enzyme found throughout the body. Tissue transglutaminase is a critical part of how the body functions, and specifically, how the tight junctions in the microvilli (think hairy fingers) in our gut are formed. When tTG interacts with gliadin, it creates antibodies - enzyme that is such an important part of our body is now bad - body attacks itself. Celiac disease is one of the most well-known gluten-related diseases, and those with the disease are advised to avoid more than wheat. ● Roughly 1% of people have celiac disease- Besides wheat, the following grains contain prolamins: Grain Prolamin Protein Wheat Gliadin Barley Hordein Oats Avenin Corn Zein Rye Secalin Sorghum Karirin Not all prolamins are believed to trigger celiac disease - the main ones are those from wheat, barley, and rye. Oats can be a trigger for some. So how do prolamins and gluten relate? ● The prolamin gliadin in wheat is the main protein that is believed to trigger celiacs, and gliadin is one of the proteins that makes up gluten. Prolamins can cause more problems than just celiacs disease. For those who react negatively to them, they can cause: ● Brain fog ● Joint pain ● Thyroid issues ● Chronic inflammation ● Increase intestinal permeability Many of the negative effects are due to a proinflammatory immune response to prolamins. In studies it was found that an increased production of proinflammatory cytokines occurred for both celiac patients as well as healthy controls, however the impact was greater for those with celiac disease. Studies have confirmed that gluten-sensitivity exists, and many who experience IBS have gluten sensitivity. Case Study: In a double-blind, randomized, placebo-controlled study on 34 patients with IBS and without celiac disease, it was found that those who followed the gluten-free diet experienced fewer IBS symptoms, pain, fatigue, and bloating as compared with those who consumed the gluten diet. ● 34 patients ● 6 weeks of a gluten-free diet with exception of two bread slices and one muffin per day. Either with gluten or gluten-free ● The mechanism was not discovered as tests did not generate significant differences between the groups, however the reported symptoms were significantly less for those without gluten. If you have sensitivity towards gluten, it is a good idea to replace grains with starchy vegetables, such as sweet potatoes and beets. For everyone, it is a good idea to cut grains out for a week and reintroduce them one at a time to see if you have any sensitivity. What is Gluten and Should It Be Avoided? (+ The Worst Foods)
Gluten is a term used to describe the protein found in grain products containing wheat, rye, barley, and sometimes oats. Gluten is the component in these grains that gives the glue-like or sticky consistency/texture to bread dough and pasta. Gluten is often found in breads, pastas, crackers, cookies, and even oatmeal if it is processed in a facility that processes other gluten containing products. Foods which are gluten free are foods like whole fruits, vegetables, potatoes, rice, dairy, and meat. It's important to know that if a processed food in a package may have a label that says gluten free on it with the letters "GF" within a circle. However, some products don't have the label and don't contain gluten. In addition, just because a product doesn't have wheat doesn't mean it doesn't have gluten in it. Gluten can be in food colorings and malted beverages as well, so it's important to read the food labels carefully. A great website for more information is celiac.org and offers a large list of gluten containing foods. Those with Celiac disease experience bloating and other stomach and intestinal issues when they eat gluten.

Today I'm going to answer the question, is whole wheat bread good for diabetes. But before we get into that, make sure you download my free diabetes management book which also includes a diabetes grocery shopping guide (foods to eat and avoid). As a backdrop to this video, you may want to look at our videos on “Rye Bread and Diabetes” and “Wheat and Diabetes” for reference material. When we talk about “whole wheat” we are basically saying that the whole grain of wheat is being used to make something. The grain is made up of 3 parts, the endosperm, the germ and the bran. The endosperm makes up about 83 percent of each kernel. The bran makes up about 14.5% and the germ 2.5%. Breads, crackers, pasta, flour, cereal, condiments, beer, just a short list of how we use wheat. It is hard to find processed foods without some type of wheat product in it. Wheat has been around since the cradle of civilization. Wheat is not bad, but has changed. The endosperm is the starchy part of wheat. When white flour is made, the endosperm is all of the grain that is used. So much of the fiber and nutrients are lost because the bran and germ house the bulk of that material. So because whole wheat bread has all this stuff in tact it must be better for you than white bread, right? Not exactly. If you have seen many of our videos, you know I am a firm believer in the glycemic load as a measure for whether or not a food might be good or bad for diabetes. Let’s compare whole wheat with white bread on that basis. Whole wheat has a GI of 69 and GL of 9. Both are at the upper level of low on the scales. White bread has a GI of 73 and GL of 10. Not a great deal of difference is there? The main difference is seen in whole GRAIN bread where the GI is 51 and the GL is 7. So is whole wheat bread good for diabetes? It is, but not as good as whole grain bread and not really any worse than white bread. Breads, like many other foods, must be eaten in moderation.
